eye healhty eatingWhen it comes to our health, there are some facts that we just can’t neglect. Every day we receive so much information through our eyes but little do we think about taking care of them.

According to the American Macular Degeneration Association, “Few people are aware that Macular degeneration is an incurable eye disease and that it is the leading cause of blindness for those aged 55 and older in the United States, affecting more than 10 million Americans.”

Eating for Eye Health offers more than 90 delicious recipes carefully selected and tested by health professionals to help people lower their risk level for Macular Degeneration.

The art design is beautiful and easy to read. It has many vegetarian dishes but includes one chapter with fish dishes as this protein is recommendable to avoid vision loss.

Some of the recipes are: Field Mushrooms with Soft Herbs, Lemon and Feta, Granola, Nut praline, Roast Golden Pumpkin filled with Indian spiced vegetables, and just to mention a dessert Apple and Raspberry Crumble.
The recipes include notes to help you find substitutes or reduce fat intake.

At the end you will find some tables related to Antioxidants for Eye Health and a content information for some common foods. For instance, do you know that Kale has the highest content of Lutein & Zeaxanthin, Bell Pepper  the highest content of Vitamin C, and Spinach the highest content of Vitamin E?

The book includes some facts about Macular Degeneration and preventive measures like having your eyes tested including the macula, don’t smoke, etc.

Though this book might contain some ingredients hard to find in the US, most of the substitutes are easy to find and recipes give you the flexibility to improvise and be creative.
